Alfredo Sauce

1/8 cup arrowroot powder
1/4 cup butter
2-3 fresh, chopped garlic cloves
2 cups raw whole milk (as raw as you can get)
1/2 cup raw milk parmagino cheese
1/2 cup raw milk Asiago cheese
1/4 cup cultured sour cream
Sea salt
Pepper

In a small sauce pan melt butter and garlic on medium heat. Add arrowroot and stir well. Reduce to low heat. Let cook for 3-4 minutes, stirring frequently. Slowly mix in milk and bring to a very light simmer. Do not boil! Remove from heat and add cheeses. Mix slowly until cheese has mostly melted. Add sour cream and mix well. Salt and pepper to taste.

By not bringing the dairy products past 118 degrees, you will not destroy any enzymes, vitamins or nutrients. The sour cream will give you lots of good probiotics and give your sauce a nice zing.
